No Bake Cookie Tips
It’s important to get the minute oats and not regular, old fashioned so they cook and soften properly. You can go with creamy or chunky peanut butter. It depends on how much texture you want your cookies to have.
To prepare the cookies, you need a saucepan and whisk/spoon, plus somewhere for the cookies to set and cool. Line baking trays with parchment paper, use a silicone baking mat or skip the trays and just line your counter.
- Mix the first 4 ingredients together and bring to a FULL boil over medium heat.
- Let the mixture boil for at least a minute, whisking constantly. If it doesn’t boil long enough, your cookies will be soft. Too long and you’ll have drier cookies.
- Take off the heat, stir in peanut butter and vanilla. Lastly, add the oats.
- Drop onto your liner and allow them to cool.
